Taste of Home Cornmeal Pancakes

Looks just like regular pancakes, but arguably taste better

A couple thanksgivings ago I decided that I would make cornbread and bought a big bag of cornmeal. While the cornbread came out pretty good, I never made it again and now I’m left with a big bag of cornmeal. I started looking for other things that I could make with cornmeal and came across this recipe for cornmeal pancakes. I was intrigued. Cornbread is pretty good, how would it be in pancake form? There weren’t many ingredients and everything in the recipe seemed pretty simple, so I went ahead and made them.

Key Ingredients and Omissions:

I didn’t omit anything, but I did upgrade the 2% milk to whole milk.

Cooking Review:

Mixing batter: 11 minutes

This step is very easy and straightforward. Mix the dry ingredients and wet ingredients in separate bowls then combine them. Not much else to say. You guys should definitely take less time than I did here. I halved the recipe, by the way.

Cooking Pancakes: 18 minutes (6 minutes per batch)

After I preheated my griddle, I added some butter to it then poured 1/4 cup portions of the batter onto the hot griddle. On the first batch, I flipped the pancakes after 4 minutes and removed them from the heat after 2 more minutes. On the next two batches, I let each side cook for 3 minutes.

Analysis:

In my opinion, these are flat out better than the typical pancakes. There’s just more flavor and texture than most other pancakes I’ve had. Yes, there is a corny flavor, but it’s no more than in cornbread. These pancakes are fluffy, as you would expect from a pancake, while adding a pleasant textural quality from the cornmeal. This isn’t to say that the pancakes are by any means gritty, though. They are slightly sweet on their own, but I like to enjoy them with some maple syrup, which works here just as well as it does on any other pancake or waffle. I’ve seen pictures of these with blueberries in them, which would probably be a great addition if you like them. I have to give this recipe a 10/10. It’s quick, easy, and even better than you might expect.
