Snoop Dogg Corn Muffins

Who doesn’t like corn muffins and corn bread? You can probably tell that I’m in the group that enjoys them. Sure you can get the premixed boxes which tend to turn out okay but most times making it yourself just turns our better. So, I decided to give Snoop Dogg’s version a try. So far, his recipes have been fairly hit or miss, but I don’t think there’s too much to a cornbread. I have a few other corn bread recipes queued up, so when I make those, I will be sure to cross reference them.

Nothing in this recipe is special, so there is nothing really key and nothing was omitted. It’s one of those recipes where you kinda need to use everything.

Cooking Review:
Mixing Dry Ingredients: 4 minutes
Just like with many bread/cake type recipes, the dry and wet ingredients are mixed separately before the dry is added into the wet. After measuring and weighing out the appropriate ingredients, I mixed them thoroughly.
Mixing Wet Ingredients: 11 minutes
The first step of mixing the dry ingredients is to mix the sugar and butter with a hand mixer until smooth and creamy. The rest of the wet ingredients were added and mixed next.
Mixing, filling cups, and Baking: 25 minutes
The dry ingredients were added in batches to the wet ingredients and mixed until just combined. I scraped down the sides of the bowl at the end and mixed for a few seconds more to ensure everything was mixed in. I then filled the muffin tin with liners and the batter until about 3/4 of the way full. I had pretty much just enough batter to make 12 muffins. Finally, I baked the muffins for 15 minutes, turning the tray in the oven after 8 minutes. I then took them out of the oven and let them cool.
Analysis:
The first thing I noticed was how soft these muffins came out. The texture was very nice, but there wasn’t the granular texture I’d expect from a cornbread, which was something I missed. Unfortunately, there wasn’t much flavor to make up for the lack of an interesting texture. They are very slightly sweet, much less sweet than most other corn bread. There really isn’t too much to say about these, as there is so little going on with these muffins. I’ll give them a 6/10. They are pretty underwhelming and may lose out to the boxed mix.
