Buttery Shrimp With Dill

Not too much to say about this recipe. It seems pretty simple and straightforward. Shrimp cooked in butter and finished in dill should be pretty good if you ask me. Let’s confirm with this recipe from the Zaytinya Cookbook.


Key Ingredients & Omissions:

None of these ingredients are particularly special. I would say that you should probably use a better quality butter, as you’ll be using a whole stick of the stuff. Also, I would say you should definitely use fresh dill rather than dried.

Cooking Review:

Prep: 10 minutes

The prep for this recipe included  portioning the butter, juicing the lemons (2), mincing some garlic and a shallot, and chopping the dill.

Cooking the Garlic & Shallot: 6 minutes

After letting the butter melt in the skillet, I added the garlic & shallot to cook for about 2 minutes.

Cooking Shrimp: 3 minutes

I seasoned the shrimp with salt and added them to the skillet with the garlic and shallots. I let them cook for about 3 minutes over high heat, stirring and tossing constantly.

Finishing: 5 minutes

I reduced the heat to low and added the dijon mustard and lemon juice, followed by the remaining butter one tablespoon at a time, stirring constantly to create an emulsified sauce. Finally, I stirred in the chopped dill.

Analysis:

The flavor of lemon and dill were the most prominent in this dish, which I liked. The shrimp, which were seasoned just about perfectly, go very well with the buttery, lemony, dill sauce. Be careful, though, I feel like you could easily over salt it if you get too heavy handed with it. I thought that the shrimp might be overcooked, as it remained on the heat after it had already been cooked though. However, the shrimp was still tender and well cooked. There’s a lot of sauce, so I think that this would go very well over rice, which would soak some of it up. I’m going to give this recipe a 8/10. It’s a very nice tasting dish that you can whip up pretty quickly and easy. Not too much to complain about.
