Broccoli Soup With Broken Linguine

Now broccoli soup may not sound very exciting, but I think cold weather calls for a soup of some sort. I chose this one in particular pretty much because the picture in the Italian American cookbook looked pretty good. If chicken noodle soup is good, I wonder how broccoli noodle soup turns out.


Key Ingredients & Omissions:

This is a super simple soup. You don’t even need a broth or stock. All of the ingredients are easy to find, so if you’re in a pinch this is a good recipe to make.

Cooking Review:

Prep: 26 minutes

The prep for this recipe included chopping the garlic and celery and breaking down the broccoli. I also broke up the linguine and squeezed the lemon. I also went ahead and put the broccoli into the food processor and processed it into small pieces.

Cooking Garlic & Celery: 7 minutes

I heated the olive oil in the pot and cooked the garlic, salt, and black pepper for about a minute before adding the celery and cooking for about 2 minutes.

Boil & Simmer: 38 minutes

I added the broccoli and water next. It took about 8 minutes for it to come to a boil before I reduced the heat to a simmer for 30 minutes.

Cook Pasta & Finish: 13 minutes

After simmering, I added the pasta to the soup to cook for 12 minutes. Once the pasta was done cooking, I stirred in the lemon juice and served the soup.

Analysis:

I really enjoyed this soup. There’s plenty of flavor despite the liquid just being water (and lemon juice). Most of the flavor is cooked garlic, which I don’t mind. Of course, there is also the flavor of broccoli. The texture is also pretty nice. The broccoli & pasta really thickened up the soup in a nice way, while adding some textural contrast. The celery almost disappears until you get a few chunks in a spoonful, which adds a little burst of celery flavor and texture. In all, I was pretty impressed with this soup. I was surprised by how much flavor it had despite how simple the ingredients are. I’m going to give this recipe a 9/10. You should definitely give this a try.
